Fresh Fruit Gateaux

My go to cake in summers. A gateaux is a lovely layered cake that a loaded mostly with fresh cream and fresh fruit. I end up doing many versions of this cake. The one I’m sharing here is what I made for a friend’s birthday. It has the layers of light vanilla sponge that are sandwiching within themselves some lovely fresh whipped cream and tonnes of sliced fresh fruit.

I topped it with more whipped cream and then did roses in sliced kiwis and oranges. I’ve added a few untouched caped gooseberries opened to look like florets. some lotuses made out of globe grapes and a few twigs made from caramelised sugar. A generous sprinkle of white chocolate shavings turned the cake into a wonderful winter landscape.

The caramel twigs gave the cake some height and character.
I sliced the oranges finely across and cut each slice into halves and then used those as petals for the flowers.
The idea was to create a bouquet of flowers with all the fruit I could find.
The best way to use the grapes was to make them into lotuses. This added colour and yet stayed true to the theme.
